The Cat Came Back and other American Folksongs - by Mary Goetze (1984 Magnamusic-Baton, Inc.)
I love this compilation.  Songs include "Built My Lady a Fine Brick House", "Goodbye, Old Paint", "Fed My Horse", "John Kanaka", "The Cat Came Back", "Never Sleep Late!", "The Old Sow's Hide", "Shoo My Love", and "Fourth Day of July".  Most songs are in 2 parts, with orff instrument accompaniments.  My favourites are "The Cat Came Back" and "Fourth Day of July".

Sing We Noel: A collection of carols arranged for treble voices - by Mary Goetze (1984 MMB Music, Inc.)
These songs are beautiful!  They are also written for 1 to 3 parts and are accompanied by orff instruments.  Songs include: "Nouvelles Agreable", "The Holly and the Ivy", "Sing Lullaby on This Christmas Night", "Silent Night", "Holiday Round", and "Noel Nouvelet".  Great for grades 3 to 6.

Can You Canon? by Jos Wuytack
This tiny book is awesome!  It has 55 canons - and they are beautiful - they work really well.  This book is available at Empire Music.
